Gado Gado is a national Indonesian salad that is slightly boiled, blanched or steamed vegetables and combine with boiled egg, boiled potato, fried tofu, and sometimes eaten with lontong (rice wrapped in banana leaf) served with a peanut sauce dressing.
Peanut Sauce:
300 gr peanuts, peel and fry until light brown, finely ground (or use peanut butter)
3 bird chilies, ground
1 tbsp shrimp paste
3 tbsp palm sugar, shaved
3 cloves garlic, ground
5 cloves shallots, ground
500 ml of water
5 kaffir limes
salt to taste
Salad:
5 medium potatoes, diced or sliced
5 eggs, boiled
100 gr Chinese cabbage
100 gr bean sprouts, roots trimmed, blanched
100 gr tofu, fried and diced
1 bunch snake beans, coarsely, chopped, blanched
100 gr carrots, sliced thinly
Condiments:
Prawn or garlic or tapioca crackers
Fried Shallots
Sweet Soy Sauce (optional)
