Dendeng Balado is one of the famous Minangkabau (North Sumatra of Indonesia) cuisines. The meaning of “Dendeng” is meant a dried or deep-fried thinly sliced beef jerky and served with “Balado” or “with or in chillies” in Minang dialect. The chilies are the key to this dish, and they have to be fried before serving with the beef.

Ingredients

1 kg of thick-sliced beef

5 cloves of garlic

Enough water for boiling

Balado (Chilies) ingredients

500 g chilies

5 shallots

5 cloves of garlic

1 tsp of white pepper

1 tsp of coriander

1 tbsp of tamarind

2 tsp of salt

2 tbsp of sugar

Oil for deep-fried

1 Lime

3 leaves of lime leaves

Some waters

Instructions
  1. Boil the beef with garlic on medium heat until they change color.
  2. Dry meats with a paper towel and beat them with a meat tenderizer.
  3. Heat oil in a wok, and deep fry the beef on high heat, until they turn darker.
  4. Keep the leftover oil enough to saute the chilies later. (left it around 5 a tablespoon of oils)
  5. Grind chilies and the rest of the spices, (note: don't need to grind them to a paste).
  6. Saute the chilies together with leftover oil.
  7. Give a dash of the squeezed lime juice.
  8. Place the beef on a plate, and pour the chilies on top.
